Schlutzkrapfen – a specialty from the Isarco Valley

Ingredients for 4 servings:

SchlutzkrapfenDough:

200 g wheat flour
100 g rye flour
1 egg
2 yolk
salt
olive oil
water

Stuffing:

onion
olive oil
garlic
200 g minced and boiled spinach
salt and pepper

Preparation:

Mix the ingredients for the dough and let it rest in a cool place for half an hour. Sauté the minced onion with the garlic in olive oil. Add the spinach and flavour with salt and pepper. Roll out the dough and cut out circles (approx. 6 cm of diameter). Put small portions of spinach on the circles and close them in order to obtain a half circle. Be careful to press gently on the borders. Boil the „Schlutzkrapfen“ in salted water for 4 minutes, let them drain and add brown butter. Serve with parmesan cheese and chives.
